Starting or wanting to renovate an Italian restaurant?

This is a service aimed to all the entrepreneurs who are planning to open a new Italian restaurant or to renovate their already existing activity.

In our experience Italian restaurants located outside Italy make the common mistake of adhere to an abstract cliché of how an Italian restaurant probably is in Italy.This is due to the fact that most people when visiting Italy has the chance of visiting cities that are extremely tourist and intentionally give their foreign customers what they expect to find: Rome, Florence and Venice are the proof of what I'm saying.
These restaurants, and therefore their replicas abroad, are the representation of an ideal ristorante, trattoria or osteria that existed in the past, around the 50's, with the same setting and menu.
Just to make a comparison it's like if all the French restaurants where like old bistrots serving frog legs all the time!Well, we'd like to see new Italian restaurants made with a different philosophy, adhering to new standards of food, still part of the glorious and rich tradition of the Italian cuisine but less stereotyped, modern without being just fashionable, warm and familiar without being falsely friendly.

This can be achieved by working on these aspects:

  • Study of the menu: understanding what type of Italian restaurant the client wants to create, selection of recipes, adaptation of existing recipes, creation of new recipes, menu layout;
  • Study of the general layout of the restaurant: premises, interior decoration, furnishings;
  • Kitchen staff training;
  • Periodical menu update;
  • Periodical training of the kitchen staff to follow the menu updates.

It is our conviction that this type of consultancy can be effectively provided only by Italians living in Italy, whom are deeply immersed in the Italian culture and in the continuous flow of Italian life.
